Italy Comes to Primard

In Primard, Italy naturally finds its place to offer a unique experience in Eure-et-Loir. With Ottavio La Tavola, the Estate showcases a generous and bright Italy, inspired by the great family tables of the peninsula. Following in the footsteps of Pieve Aldina, nestled in the Chianti hills, the restaurant creates a dialogue between two regions united by the same standard: that of exceptional produce and respect for the seasons. The menu, conceived in collaboration between Niccolò Pini, Florentine Chef of our Tuscan House, and Louis Vuillecard, Chef of the Domaine de Primard, embodies this fusion of expertise and terroirs.

From Tuscan olive groves to the estate's vegetable gardens, the same attention to living things infuses every creation. Transalpine cuisine revisits Italian classics with precision, centered around a menu designed as a journey, highlighting selected products and traditions.

Conceived as a place for sharing, the table evokes the family homes of Italy, where time stretches out around generous dishes and warm conviviality.

Italian cuisine with contemporary inspirations

Ottavio La Tavola's menu highlights a selection of iconic Italian dishes. Each plate showcases exceptional products, in an approach that is both faithful and contemporary to tradition.

From antipasti to primi, through to secondi, the flavors are expressed with balance and refinement: langoustine tartare with Sicilian citrus, vitello tonnato with fried capers, then gnocchi with gorgonzola, walnuts, and black truffle, scallops cannelloni with Prosecco emulsion, or saffron risotto with garden herbs. For secondi, veal Milanese, fresh catch with Mediterranean notes, or lamb with fresh mint continue this Italian classic lunch or dinner. Pieve Aldina Extra Virgin Olive Oil, hand-picked and cold-pressed, seasons the dishes, imbuing each plate with an authentic expression of the Tuscan landscape.

In an elegant setting, with white tablecloths, Italian tableware, fine glassware, and a view of the gardens, the moment lingers with simplicity, generosity, and the Italian art of living.
